The Chocolate Bear Kitchen's Brownie Cookies (Vegan and Gluten Free) Recipe

What's an office without office treats? Here's a delicious recipe from The Chocolate Bear Kitchen that will satisfy your employees taste buds and keep them going throughout the day.

You will need:

Mixing bowl

Baking Tray (ceramic or lined)

Ingredients:

1/3 Cup Cacao or Cocao Powder

1/3 Cup Unrefined Sugar

1 Cup Tapioca or Buckwheat Flour (or 1/2 Cup of each)

1 Tbspn Baking Powder

1/2 Cup Ground Almonds

40g Chopped Dark Chocolate

1/3 Cup Raisins

1/3 Cup Melted Coconut Oil

1 Tspn Cider Vinegar

2/3 Cup Coconut Milk

Method:

Preheat the oven to 180°C.

Add the Flour, Baking Powder, Cacao, Sugar, Almonds, Raisins and Chocolate to a bowl and mix.

Fold in the Coconut Milk, Coconut Oil and Cider Vinegar.

Spoon heaped tablespoons onto a baking tray, or roll and flatten in your hands.

Bake for 10-12 minutes.

Allow to cool on the tray.
